Seafood chef (raw/smoked fish)
We are seeking a passionate Chef (raw/smoked fish) to join our culinary team in Lithuania. In this role, you will be responsible for preparing, smoking, and perfecting traditional Lithuanian smoked fish dishes using time-honored techniques. If you have a love for fish, experience in kitchen operations, and a dedication to quality, we’d love to hear from you!
Responsibilities:
- Prepare and clean fresh fish for smoking (e.g., eel, salmon, trout, or local varieties).
- Operate and maintain smoking equipment (cold/hot smoke methods).
- Monitor smoking times, temperatures, and wood types for optimal flavour.
- Cook various fish recipes (soups) while preserving traditional Lithuanian methods.
- Ensure compliance with food safety and hygiene standards (Maisto sauga).
- Assist in inventory management and sourcing high-quality fish.
- Collaborate with kitchen staff to integrate smoked fish into menus.

Requirements:
- Previous experience in professional kitchens, smoking fish, or seafood preparation.

- Basic understanding of food safety regulations (training provided if needed).
- Physical stamina for standing long hours and handling raw fish.
Preferred (but not required):
- Formal culinary training or apprenticeship.
- Experience with artisanal or traditional smoking methods.
- Creativity in developing new smoked fish products.
